Posted - Sep 25 2007 : 08:12:21 AM After making MaryJane's fabulous graham crackers (http://www.maryjanesfarm.org/SimplyMJ/articles/column40.asp), I decided to strike out & try making chocolate grahams. Here's the recipe I ended up with - they're hearty enough for trail snacks, healthy enough for kids snacks, and they're dee-licious!
Chocolate Graham Crackers
2 cups whole wheat flour 1/2 teaspoons salt 1/2 teaspoons baking soda 1/4 cups cocoa
3/4 cups butter 2/3 cups unrefined/turbinado sugar 1/2 tsp molasses 3 tablespoons honey 1 teaspoon vanilla extract 1 large egg
Optional topping: 1/8 cup powdered sugar
Directions
1. Mix the dry ingredients together in a medium bowl. 2. Melt the butter, pour it into another bowl, and add the sugar, honey, vanilla, and egg. Mix until combined. 3. Add the dry ingredients to the wet and mix until a fairly firm dough is made. Wrap the dough in plastic and place it in the refrigerator to chill. 4. When the dough is firm enough to roll, lightly dust a big cookie sheet and a rolling pin and roll the dough to about 1/4-inch thick. Preheat the oven to 350 degrees. 5. Cut squares into the rolled dough (or use a cookie cutter), and use a fork to pierce holes in the crackers. 6. Bake the crackers for 15 minutes or until the edges just start to darken. 7. Separate and remove crackers with a spatula & cool on a rack. 8. Optional: Sprinkle powdered sugar over the tops.
Store in an airtight container.
