I just grabbed up some watercress from our creek this evening and stuffed it into my BLT - well, BLAWT...
It was organic bacon, lettuce, avocado, watercress, and tomato on Ezekial sprouted grain toast.
DEE-LICIOUS!

Spring Watercress Salad Ingredients · 1 bunch asparagus, stems trimmed · A good handful or two of watercress leaves · 4 slices bacon · juice from 1 lemon · 1/4 cup olive oil · salt and freshly ground black pepper Boil asparagus in salted water for six minutes, or until tender. Drain and put in a large bowl. Add the watercress. Fry the bacon till crispy and crumble on top of the salad. Drizzle with olive oil and lemon juice, and season with salt and pepper.

Both of those sound yummy, Jen! I will have to try that next time I am around a creek with good water cress!

I love watercress - does it grow by ephemeral streams? That's all we have (besides the irrigation ditches and canals) here - and I would SO love to find some. I wonder if I could plant some along the canal that borders one side of the farm. YUM!!!
